Bolzano Artisan Meats is the first company in Wisconsin to bring back the lost art of dry curing, and one of the only in the nation to make products from locally raised heirloom hogs as rare as our Hereford hogs from Lake Geneva, Wisconsin.
We take our inspiration from the midwest’s makers of great artisan cheeses and craft beers — to bring back time-honored foods made with old world craftsmanship.
And like these food heroes of ours, we take pride in being small. Think start-up-microbrewery instead of food factory. We love it that other meat companies produce more in a week than we do in a whole year.
Our home is in Milwaukee’s Riverwest neighborhood, in what was built in the 1950’s a dairy company, and what was most recently home to Wisconsin’s first and only craft distillery. (they outgrew our little spot, but promised to keep some good luck behind for us.)
